1 Italian sausage
1 onion, chopped
2 cloves garlic, minced
3 Tbsp. olive oil
3 potatoes, peeled
& cubed
4 cans chicken broth
1 cup half and half
Fresh bacon bits
Kale, chopped
(optional)
Cook sausage in oven for 30 minutes at 350 degrees.
Meanwhile, in a large pot, caramelize onion and garlic in
olive oil. Add chicken broth and bring to a boil. Add potatoes and boil for
about 10 or 15 minutes or until the potatoes are tender.
When sausages have finished baking, slice and add to soup.
Add bacon bits, kale and half and half. Season with salt and pepper to
taste. Simmer until hot.
